Ingredients

  • 1/2 c cilantro
  • 1/4 c oil (mild-flavored, such as sunflower)
  • 1/4 c onion
  • 2 T chives
  • 1-2 jalapenos
  • 1-2 T lime juice
  • 2 handfuls grated unsweetened coconut

Instructions

  1. Blend all ingredients using a food processor.
  2. Serve as a side dish with rice. Can also be used to top chili or other bean soup.
