Cheddar Cheese Squash

Ingredients

  • 2 lb. yellow crookneck squash
  • 2 c. shredded Cheddar cheese
  • 8 slices bacon, crisp cooked, drained and crumbled
  • 1 c. crushed herb-seasoned croutons
  • 1/2 c. melted butter

Instructions

  1. Scrub squash and cut off ends (do not peel).
  2. Slice to make 6 cups.
  3. Cook, covered, in a small pot of boiling water until tender, 15 to 20 minutes.
  4. Drain well and sprinkle with salt and pepper.
  5. In a 9 x 12 x 2-inch baking dish, layer the squash, Cheddar cheese, bacon and croutons.
  6. Drizzle with melted butter. Bake, uncovered, at 350° for 20 minutes or until cheese melts and croutons are golden brown.
