Cheese Filled Triangles

Ingredients

  • 1/4 lb. Feta cheese
  • 1/4 lb. farmer cheese
  • 1/4 lb. Ricotta cheese
  • 3 oz. cream cheese, softened
  • 2 Tbsp. Parmesan cheese
  • 2 eggs
  • 20 sheets Athens or Apollo fillo dough
  • 3/4 c. butter, softened
  • salt and white pepper to taste

Instructions

  1. In processor bowl, combine cheeses, eggs and pepper.
  2. Process until smooth.
  3. Prepare 40 small fillo triangles according to directions on package. Fill each triangle with 1/2 teaspoon of cheese mixture. Brush outside of triangles with butter.
  4. Place, seam side down, on cookie sheet. Bake in preheated 350° oven for 15 minutes or until golden brown and puffed.
  5. Serve hot.
