Cheese Shortbread

Instructions
- Cut cheese into shreds and cream with butter.
- Sift in flour, salt and pepper.
- Work this mixture into cheese and butter.
- The mixture will be crumbly.
- Press it together in a piece of waxed paper and chill for several hours.
- Roll to 1/2-inch thickness, folding crumbs over and over until dough holds together in an even rectangle.
- Cut into 1-inch squares.
- Place on a lightly greased cookie sheet about 2 inches apart.
- Bake in moderate oven (375°) for 20 minutes.
- Serve hot or cold.
