Cheese Shorties

Ingredients

  • 1 pound extra sharp Cheddar cheese
  • 1/2 pound unsalted butter, softened
  • 2 cups flour
  • Few dashes cayenne pepper

Instructions

  1. Using an electric mixer or food processor, cream cheese and butter until thoroughly mixed.
  2. Add flour and cayenne and mix thoroughly.
  3. Shape into rolls 1 inch in diameter.
  4. Wrap in wax paper or plastic wrap and chill at least one hour or overnight, or wrap in aluminum foil and freeze.
  5. To serve, preheat oven to 400 degrees.
  6. Let frozen rolls defrost in refrigerator for at least a couple of hours or overnight.
  7. Cut thawed or chilled rolls into slices 1/3 inch thick and place on ungreased cookie sheets one inch apart.
  8. Bake about 10 minutes, until light brown on bottoms.
