Cheesy Chili Rellenos

Ingredients

  • 6 canned whole mild green chiles
  • 6 (3 x 1/2 x 1/2-inch) strips Monterey Jack cheese
  • 3 eggs, separated
  • 3 Tbsp. all-purpose flour
  • 1 Tbsp. water
  • 1/4 tsp. salt
  • all-purpose flour

Instructions

  1. Rinse chiles; remove seeds and pat dry.
  2. Stuff chiles with strips of cheese.
  3. (If chiles tear, overlap torn sides; batter will hold them together.)
  4. Beat the egg yolks with an electric mixer until fluffy and pale yellow (about 3 to 5 minutes).
  5. Add 3 tablespoons flour, water and salt; mix well.
  6. Beat egg whites until stiff; fold into yolk mixture.
  7. Dredge stuffed chiles in flour, coating well.
  8. Dip chiles in egg mixture.
  9. Brown chiles on both sides in 1/2 inch of oil at 370° for 3 to 5 minutes.
  10. Drain on paper towels.
