Cheesy Ham & Bacon Chowder

Ingredients

  • 8 slices bacon (or 1/2 pkg)
  • 1 onion, chopped
  • 1 cup chopped carrot
  • 3 tablespoons flour
  • 3 cups milk
  • 1 1/2 cups water
  • 2 1/2 cups potatoes, cubed
  • 2 -3 cups frozen corn
  • 2 teaspoons chicken bouillon granules
  • pepper
  • 3 cups shredded cheddar cheese

Instructions

  1. In a large soup kettle, fry bacon until crisp.
  2. Remove bacon, (reserving drippings) dice and set aside.
  3. Saute the onion and carrots in reserved bacon drippings until tender.
  4. Stir in flour until blended; gradually add milk and water.
  5. Bring to a boil; cook and stir for 2 minutes.
  6. Add potatoes, corn, bouillon and pepper.
  7. Reduce heat; simmer, uncovered, for 20 minutes or until potatoes are tender.
  8. Add cheese and ham; heat until cheese is melted.
  9. Stir in diced bacon.
