Cheesy Meat Bread

Ingredients

  • 1 c. self-rising cornmeal
  • 1 c. milk (may use low-fat)
  • 2 eggs, beaten
  • 1 can creamed corn
  • 1/4 c. vegetable oil
  • 1/2 lb. lean ground beef
  • 1 large onion, chopped
  • 2 c. Cheddar cheese, grated

Instructions

  1. Mix meal, milk, eggs, corn and oil. Pour half of this mixture into greased 9 x 13-inch dish. Brown meat and drain. Place on top of corn mixture. Chop onion and spread on top. Pour remaining mixture over onion. Bake at 350° for 50 minutes. Cover bread with grated cheese and cook until cheese is melted.
