Ingredients

  • 2 cups cooked chicken, cut-up
  • 1/2 cup chopped onion
  • 1 (4 oz.) can chopped green chilies, drained
  • 2 cups shredded Monterey Jack cheese (8 oz.)
  • 1 (12 oz.) can Mexican-style corn, drained
  • 1 cup Bisquick baking mix
  • 1 cup milk
  • 1/2 teaspoon salt
  • 3 eggs, separated

Instructions

  1. Preheat oven to 350°F.
  2. Grease an 11 x 7 x 1 1/2-inch rectangular baking dish.
  3. Layer cooked, cut-up chicken, chopped onion, drained chopped green chilies, shredded Monterey Jack cheese, and drained Mexican-style corn in the dish.
  4. In a bowl, beat the Bisquick baking mix, milk, salt, and egg yolks until smooth.
  5. In a large bowl, beat egg whites until stiff peaks form.
  6. Gently fold the egg yolk mixture into the beaten egg whites.
  7. Pour the egg white mixture over the layered ingredients in the dish.
  8. Bake until a knife inserted in the center comes out clean, about 35 minutes.
