- Preheat oven to 350°F.
- Grease an 11 x 7 x 1 1/2-inch rectangular baking dish.
- Layer cooked, cut-up chicken, chopped onion, drained chopped green chilies, shredded Monterey Jack cheese, and drained Mexican-style corn in the dish.
- In a bowl, beat the Bisquick baking mix, milk, salt, and egg yolks until smooth.
- In a large bowl, beat egg whites until stiff peaks form.
- Gently fold the egg yolk mixture into the beaten egg whites.
- Pour the egg white mixture over the layered ingredients in the dish.
- Bake until a knife inserted in the center comes out clean, about 35 minutes.
