Cheesy Vegetable Saute

Ingredients

  • 1 c. green pepper strips
  • 1 c. red onion, cut into rings
  • 1 garlic clove, minced or 1 tsp. garlic
  • 1/2 tsp. dried basil leaves
  • 3 to 4 Tbsp. margarine
  • 2 medium tomatoes, peeled and wedged
  • 3 oz. shredded Mozzarella cheese (3/4 c.)

Instructions

  1. Melt margarine in large skillet.
  2. Saute peppers, onion, garlic and basil until crisp-tender.
  3. Stir in tomatoes.
  4. Place on ovenproof serving platter.
  5. Sprinkle cheese on top.
  6. Broil until cheese is melted.
  7. Serve immediately.
  8. Serves 4.
