Cherry Almond Muffins

Ingredients

  • 1 egg
  • 3/4 c. milk
  • 1/3 c. oil
  • 1/2 tsp. almond extract
  • 2 c. flour
  • 3 tsp. baking powder
  • 1/4 c. sugar
  • 1/4 c. chopped maraschino cherries
  • 3 Tbsp. maraschino cherry juice
  • 1/2 tsp. salt

Instructions

  1. Beat egg, stir in milk, oil, cherry syrup and almond extract. Mix in flour, 1/4 cup sugar, cherries, baking powder and salt, just until flour is moistened.
  2. Fill 12 muffin cups 2/3 full.
  3. Mix 2 Tbsp. sugar and 2 Tbsp. chopped almonds.
  4. Sprinkle over batter in muffin tins.
  5. Bake at 375° for 25 minutes.
