Ingredients

  • 1 (1 lb.) can pitted Bing cherries
  • 1/2 cup currant jelly
  • 3/4 cup cooking sherry
  • 3 oz. black cherry Jell-O
  • 1/4 cup lemon juice
  • 1/4 cup chopped pecans

Instructions

  1. Drain cherries and reserve 3/4 cup of syrup.
  2. Combine the reserved syrup, currant jelly, and cooking sherry in a saucepan.
  3. Bring the mixture just to a boil and remove from heat.
  4. Add the black cherry Jell-O and stir until dissolved.
  5. Stir in the lemon juice and add the drained cherries.
  6. Chill until the mixture is partially set.
  7. Add chopped pecans to the mixture.
  8. Pour into a 3-cup ring mold and chill overnight.
  9. Unmold the ring onto greens or serving platter.
