Cherry Tiramisu Cups

Ingredients

  • 1 (13.5 oz) can cherries in syrup
  • 1/2 cup cherry liqueur or brandy
  • 5 None egg yolks
  • 1/2 cup granulated sugar
  • 1 None vanilla bean, seeds scraped out
  • 1 lb mascarpone
  • 16 None ladyfinger cookies
  • 1/2 cup black coffee, chilled

Instructions

  1. In a saucepan, combine cherries with syrup and liqueur over low heat. Simmer, stirring, for 4-5 mins, until syrup reduces slightly. Reserve 12 cherries to decorate.
  2. Meanwhile, combine egg yolks, sugar and vanilla bean seeds. Whisk until thick and pale. Beat in mascarpone.
  3. Dip ladyfingers into coffee then use to line the base of 4 serving glasses. Spoon 1/3 of the cherries and syrup over top then add a layer of mascarpone mixture. Repeat with remaining cherries and syrup and mascarpone mixture. Cover and chill for at least 4 hours.
  4. Serve tiramisu topped with reserved cherries.
