Ingredients

  • 2 eggs, separated
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 1/4 cup milk
  • 2 Tbsp margarine, melted
  • 1 tsp lemon juice
  • 1/4 tsp almond extract
  • 1 cup flaked coconut
  • 1 Pet Ritz pie shell

Instructions

  1. Preheat oven to 375°F.
  2. Beat egg yolks and salt together in a bowl.
  3. Gradually add sugar, half at a time, and blend well.
  4. Mix in milk, melted margarine, lemon juice, and almond extract.
  5. Beat egg whites until stiff peaks form.
  6. Fold the beaten egg whites and flaked coconut into the egg yolk mixture.
  7. Pour the filling into the frozen pie shell.
  8. Bake for 35 minutes until golden and set.
