Ingredients

  • 1 whole chicken, cut up
  • 3/4 cup rice
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 1 can mushroom soup
  • 2 cans water or chicken broth
  • 1 small jar pimentos, chopped

Instructions

  1. Mix the cream of chicken, cream of celery, and mushroom soups with water or chicken broth.
  2. Cover the bottom of an 8 x 12-inch baking dish with the rice.
  3. Lay the chicken pieces over the rice.
  4. Pour the soup mixture over the chicken and rice.
  5. Dot with chopped pimentos.
  6. Bake for 2 hours at 350°F.
