Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 stick butter
  • 1/4 to 1/2 lb. mushrooms
  • 1 c. Marsala wine
  • 1/4 c. sliced Mozzarella cheese

Instructions

  1. Clarify the butter.
  2. Flatten the chicken breasts between waxed paper.
  3. Brown the chicken on both sides in butter over medium-high heat.
  4. Add the mushrooms and cook for about 10 minutes on medium heat.
  5. Add the Marsala wine and cook for about 5 minutes.
  6. Place the sliced mozzarella cheese on top of the chicken.
  7. Allow the cheese to melt quickly.
  8. Serve the chicken hot, preferably with steamed rice.
