Ingredients

  • 1/2 c. flour
  • 1 tsp. salt
  • 1 tsp. celery salt
  • 1/4 tsp. nutmeg
  • 1 (10 oz.) can pineapple (reserve the juice)
  • 1/3 c. soy sauce
  • 4 Tbsp. oleo
  • 1 tsp. sugar

Instructions

  1. Combine flour, salt, celery salt, garlic salt and nutmeg in a paper sack.
  2. Shake and dust the chicken.
  3. Melt the oleo in a skillet and brown each piece of chicken.
  4. Place in a casserole dish. Drain the pineapple. Combine 1 cup juice, soy sauce and sugar together.
  5. Pour over chicken.
  6. Bake at 350° for 1 hour or until done.
  7. Put pineapple chunks on top of chicken during the last 15 minutes of baking.
  8. Serve over rice.
