Ingredients

  • 25 lb. fresh chicken
  • 1/2 lb. Tender Quick
  • 1 oz. black pepper
  • 1/2 cup sugar
  • 2 tsp. saltpetre
  • 3 Tbsp. liquid smoke

Instructions

  1. Wipe off the bologna and leave the skins on.
  2. Cut the bologna into 4 or 5-inch lengths.
  3. Pack the pieces in jars lengthwise.
  4. Add 1/2 cup water to each quart jar.
  5. Cook in a hot water bath for 1 hour or at 10 pounds pressure for 30 minutes.
