Ingredients

  • 1 stewed chicken
  • 1 cup long grain rice (uncooked)
  • 1 (10 1/2 oz.) can cream of chicken soup (undiluted)
  • 3 cups chicken broth
  • 1 (8 oz.) can mushroom pieces and stems (undrained)
  • 1 packet dry onion soup mix

Instructions

  1. Bone and skin the chicken.
  2. In a bowl, stir together the rice, undiluted cream of chicken soup, chicken broth, and mushroom pieces and stems.
  3. Pour the mixture into a greased 9 x 13-inch casserole dish.
  4. Place the boned chicken on top of the rice mixture.
  5. Sprinkle the dry onion soup mix over the chicken.
  6. Cover the casserole and bake at 400°F for 1 hour.
