Ingredients

  • 1 1/2 cups diced cooked chicken
  • 1 tablespoon chopped onion
  • 1 cup milk
  • 1 1/2 cups cooked rice
  • 1/3 cup chicken broth
  • 1/2 teaspoon salt (optional)

Instructions

  1. Mix all ingredients together.
  2. Put the mixture into greased or paper-lined muffin tins.
  3. Set the muffin tins in a pan of water larger than the muffin tray.
  4. Bake in a 400°F (200°C) oven for 30 minutes.
  5. Serve on a bed of lettuce if desired.
