- Dip chicken breasts in Parmesan cheese, egg and cracker crumbs. Brown in 1/2 cup oil in skillet.
- Arrange in baking dish in single layer.
- Arrange 1 slice of 1/4-inch jack cheese on each breast. Adding oil to skillet if necessary, saute sliced fresh mushrooms until tender.
- Add wine and saute slowly for 5 minutes.
- Spoon mushrooms over chicken (not too much liquid).
- Cover and bake at 350° for 45 minutes.
