Chicken Genoa

Ingredients

  • 4 chicken breasts, skinned and boned
  • 1/2 c. Parmesan cheese
  • 1 c. fine cracker crumbs
  • 2 eggs, well beaten
  • 1 c. oil
  • 1 lb. fresh mushrooms
  • 1/2 lb. Jack cheese
  • 1/2 c. white wine

Instructions

  1. Dip chicken breasts in Parmesan cheese, egg and cracker crumbs. Brown in 1/2 cup oil in skillet.
  2. Arrange in baking dish in single layer.
  3. Arrange 1 slice of 1/4-inch jack cheese on each breast. Adding oil to skillet if necessary, saute sliced fresh mushrooms until tender.
  4. Add wine and saute slowly for 5 minutes.
  5. Spoon mushrooms over chicken (not too much liquid).
  6. Cover and bake at 350° for 45 minutes.
