Ingredients

  • 3 broiler-fryer chickens, halved
  • 3 tsp. salt
  • 1/2 tsp. Tabasco
  • 4 Tbsp. lime juice
  • 2 Tbsp. salad oil
  • 2 tsp. dried tarragon

Instructions

  1. Place chicken halves, skin side down, in a shallow foil-lined pan.
  2. Combine salt, Tabasco, lime juice, salad oil, and dried tarragon to make the marinade.
  3. Brush the marinade over the chicken halves.
  4. Bake in a moderate oven (375°F) for 45 to 50 minutes.
  5. Turn the chicken after the first 25 minutes of baking.
  6. Brush the chicken occasionally with the remaining sauce during baking.
