Chicken Pineapple

Ingredients

  • 1 chicken, quartered
  • 1 (20 oz.) can crushed pineapple
  • garlic powder to taste
  • 3 Tbsp. soy sauce
  • brown sugar
  • 2 Tbsp. ketchup
  • salt and pepper
  • about 2/3 stick butter

Instructions

  1. Place chicken in roasting pan or large casserole.
  2. Sprinkle with salt and pepper to taste.
  3. Dot butter on and around chicken. Add pineapple, garlic, soy sauce, brown sugar (enough to cover chicken pieces lightly) and ketchup.
  4. Bake for about 40 minutes at 375° or until chicken is tender, basting often.
  5. Serve over rice, flavored with butter and garlic.
  6. Serves 4.
  7. This dish can be completely prepared the day before, refrigerated covered, and popped into oven before company arrives.
