Ingredients

  • 1 bag crunched Doritos
  • 1 can Ro-Tel tomatoes
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 small diced onion
  • 8 oz Cheddar cheese shredded
  • 1 whole cut-up chicken

Instructions

  1. Preheat oven to 350°F (175°C). Lightly oil an 8 x 10-inch baking dish and spread crunched Doritos evenly in the dish.
  2. Tear the whole cut-up chicken into small pieces and place on top of the Doritos layer.
  3. In a pan, mix and heat the Ro-Tel tomatoes, cream of chicken soup, and cream of mushroom soup until hot. Add a little water if needed to achieve a medium sauce consistency.
  4. Pour the hot sauce mixture over the chicken and Doritos in the baking dish.
  5. Sprinkle the diced onion and shredded Cheddar cheese evenly on top.
  6. Bake uncovered at 350°F for 25 to 30 minutes until bubbly and cheese is melted.
