Ingredients

  • 1 small onion, finely chopped
  • 2 tsp. grated fresh ginger
  • 2 garlic cloves
  • 1/4 cup lime juice
  • 2 Tbsp. dark soy sauce
  • 2 Tbsp. curry powder
  • 1/2 tsp. salt

Instructions

  1. Cut the chicken breasts on the diagonal into very thin strips and place in a shallow dish.
  2. Combine the marinade ingredients and pour over the chicken. Stir once, cover, and leave to marinate overnight.
