Chicken Spinach Soup

Ingredients

  • 1 lb roasted boneless skinless chicken breast
  • 1/2 teaspoon cornstarch
  • 8 ounces fresh spinach, stems removed
  • 4 cups chicken broth
  • 3 slices fresh ginger, thin
  • 1 teaspoon salt

Instructions

  1. Shred chicken.
  2. Toss with cornstarch.
  3. Tear spinach into bite-size pieces.
  4. Bring broth and ginger to a boil and stir in chicken.
  5. Stir in spinach and salt, bring to boil, reduce heat, and simmer 2 minutes.
