Crispy chicken tacquitos bursting with cheesy salsa flavor, perfect as a savory appetizer or snack for gatherings and casual meals.

Ingredients

  • 2 Tbsp. vegetable oil
  • 3/4 lb. chicken in 1/2-inch pieces
  • 1/2 c. chopped onions
  • 1 c. thick salsa
  • 1 (11 oz.) can corn with red and green peppers, drained
  • 1 pkg. Ortega taco shells

Instructions

  1. Cook chicken in vegetable oil for 2 minutes.
  2. Stir well to coat chicken with oil.
  3. Add chopped onions and drained peppers; cook until chicken is done.
  4. Drain the mixture and put aside.
  5. In the same pan, combine salsa and 6 ounces of Cheddar cheese over medium heat.
  6. Cook and stir until cheese melts into the salsa.
  7. Add the cooked chicken mixture to the salsa and cheese.
  8. Break the taco shells into 4 pieces each.
  9. Spoon 1 tablespoon of the chicken mixture onto each shell piece and sprinkle with additional cheese.
  10. Bake at 350°F for 5 minutes until cheese melts and shells are crispy.
