Ingredients

  • 4 chicken breasts, halved
  • 1/2 cup flour
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1/2 teaspoon garlic
  • 1/2 teaspoon sweet basil
  • 1/4 cup Chablis
  • 4 or 5 potatoes, peeled and quartered

Instructions

  1. Roll chicken halves in a mixture of flour, thyme, oregano, garlic, and basil.
  2. Fry the coated chicken and peeled, quartered potatoes in butter until browned.
  3. Sauté onions, garlic, and mushrooms with Chablis in the pan.
  4. Reduce the liquid in the pan, then add the fried chicken and potatoes back in.
  5. Add a touch of brown sauce, then simmer for a few minutes.
  6. Finish by adding Parmesan cheese before serving.
