Ingredients

  • 2 1/2 lb. boneless chicken pieces
  • 2 Tbsp. vegetable oil
  • 12 oz. La Victoria salsa
  • 1/3 cup water
  • 17 oz. can Niblets corn
  • 1 bell pepper (green, red, or yellow), chopped
  • fresh cilantro (optional garnish)

Instructions

  1. Brown chicken pieces in hot oil for 5 minutes; drain off fat.
  2. Add La Victoria salsa and water to the chicken.
  3. Reduce heat, cover, and simmer for 30 minutes.
  4. Uncover, add drained corn and chopped bell pepper.
  5. Cover and cook for an additional 10 minutes.
