Ingredients

  • 4 cloves garlic
  • 1/2 tsp dried tarragon
  • 4 Tbsp olive oil
  • 8 oz can plum tomatoes
  • 1 lb can chickpeas, drained and rinsed
  • 1 chicken stock cube
  • 1 1/4 c water
  • Salt and pepper to taste

Instructions

  1. Peel and crush the garlic cloves.
  2. If using fresh tarragon, chop it finely.
  3. Heat the olive oil in a pot and sauté the garlic until it begins to brown.
  4. Add the tarragon and chopped tomatoes to the pot and lower the heat to simmer.
  5. Bring the mixture to a boil and cook for about 25 minutes.
  6. Add the drained and rinsed chickpeas to the soup and cook for another 5 minutes.
  7. Stir in the chicken stock cube and no more than 1 1/4 cups water.
  8. Season with salt and pepper to taste and serve.
