Ingredients

  • 4 boned chicken breasts
  • 1 Tbsp. ground coriander
  • 1 to 2 cloves garlic
  • 1/4 c. brown sugar
  • 1/2 c. peanut or sesame oil
  • 2/3 c soy sauce
  • juice of 1 lemon

Instructions

  1. Mix ground coriander, garlic, brown sugar, peanut or sesame oil, soy sauce, and lemon juice in a food processor.
  2. Marinate the chicken cubes in the mixture for 6 hours or up to 3 days.
  3. Skewer the marinated chicken pieces.
  4. Cook over low grill until done, about 15 to 20 minutes.
