Chile Con Queso (Microwave)
Ingredients
- 1 tablespoon vegetable oil ⓘ
- 1/2 cup onion, finely chopped ⓘ
- 1 clove garlic, minced ⓘ
- 1 tablespoon flour ⓘ
- 4 ounces green chilies, drained and chopped ⓘ
- 1 large fresh tomato, peeled and seeded and chopped ⓘ
- 1 tablespoon hot taco sauce
- 1/4 cup evaporated milk ⓘ
- 6 ounces monterey jack cheese, coarsely grated ⓘ
- 6 ounces sharp cheddar cheese, coarsely grated ⓘ
- tortilla chips, for dipping ⓘ
Instructions
- Place vegetable oil, onion and garlic in a microwaveable container.
- Cook on high, uncovered, 1 to 2 minutes.
- Stir and continue to cook 1 to 2 minutes.
- Add cheese, stir and cook on medium power for 2 to 3 minutes.
- Stir and cook for 1 to 2 more minutes until cheese is melted.
- Pour into a fondue pot or serving dish. Serve warm.
