Chilindron Sauce
Ingredients
- 1/4 cup olive oil ⓘ
- 1 garlic clove, chopped ⓘ
- 1 onion, sliced into rings ⓘ
- 1 green pepper, seeded and cut into strips ⓘ
- 1 red pepper, seeded and cut into strips ⓘ
- 1 pinch saffron ⓘ
- 1 teaspoon salt ⓘ
- 1 teaspoon paprika ⓘ
- 1 pinch cayenne ⓘ
- 2 cups smoked ham, diced (serrano) ⓘ
- 1 tablespoon tomato paste ⓘ
- 1 1/2 cups tomato sauce ⓘ
Instructions
- Saute the garlic in the olive oil for 10 minutes.
- Add the onion and peppers; saute until tender.
- Add the remaining ingredients and bring to a boil.
- Reduce the heat and simmer for 15 minutes.
