Chilled Vermicelli

A refreshing chilled vermicelli salad with crunchy vegetables and tangy vinaigrette, perfect as a light side or appetizer for hot weather gatherings.

Ingredients

  • 8 oz. vermicelli
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 1/4 cup chopped pimento
  • 1/4 to 1/2 cup vinaigrette dressing
  • 1/4 teaspoon basil
  • Salt and pepper to taste

Instructions

  1. Pour vinaigrette dressing into a bowl and mix in all ingredients except vermicelli.
  2. Drain the cooked vermicelli and mix it with the vinaigrette and vegetables.
  3. Chill the mixture for 24 hours.
  4. Bring to room temperature before serving.
