A moist and flavorful Chinese Coffee Cake with a tender crumb, topped with melted oleo, powdered sugar, and cinnamon—perfect for breakfast or teatime gatherings.

Ingredients

  • 3 eggs
  • 1 1/2 cups sugar
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder

Instructions

  1. Beat the eggs until thick and set aside.
  2. In a separate bowl, mix sugar and flour.
  3. Add the beaten sugar and flour to the beaten eggs and mix well.
  4. Add the baking powder to the mixture.
  5. Quickly pour in 3/4 cup of scalded milk and stir until combined.
  6. Pour the batter into a greased 9 x 13-inch pan.
  7. Bake in a preheated oven at 350°F (175°C) for 30 minutes.
  8. Melt one stick of oleo (butter) and punch holes in the hot cake, then pour the melted oleo over the cake.
  9. Sprinkle with powdered sugar and cinnamon before serving.
