Chocolate Walnut Cakes

- Preheat oven to 300°F. Line a 12-hole muffin pan with paper liners or squares of parchment paper.
- Beat egg whites until soft peaks form.
- In another bowl, whisk egg yolks and sugar together. Stir in prunes, walnuts, chocolate and orange zest. Lightly fold in the egg white.
- Spoon the mixture evenly into prepared pan. Bake for 25-30 mins on until a skewer inserted into the center comes out clean.
- Allow to cool in pan for 5 minutes. Transfer to a wire rack to cool completely. Store in an airtight container for up to 3 days.
