Chopper Liver

Ingredients

  • 3 lbs Kosher beef liver cut 1/2" thick
  • 3 large onions chopped (3 cups)
  • 1 bay leaf
  • 2 tablespoons cooking oil
  • 12 hard cooked eggs
  • 2 tablespoons mayo
  • 1/2 teaspoon salt
  • 1/4 tsp pepper

Instructions

  1. Place 1/2 liver on broiler pan.
  2. Broil 4" from heat, 3 minutes per side
  3. Repeat with remaining liver
  4. In large saucepan, cook onions and bay leaf in hot oil until onions are tender. Discard bay leaf.
  5. Using coarse blade of food processor, grind onions, liver and eggs. Grind again using fine blade.
  6. In a large bowl, stir liver mixture, mayonnaise, salt and pepper.
  7. Cover bowl and chill thoroughly.
