Ingredients

  • 6 to 7 1/2 cups flour
  • 3/4 cup sugar
  • 1 1/2 teaspoons salt
  • 2 teaspoons ground cardamom
  • 2 envelopes dry yeast
  • 1 cup seeded raisins
  • 1/2 cup shortening (margarine)
  • 2 eggs
  • 1 cup seedless raisins
  • 3/4 cup citron
  • 2 5/8 cups milk

Instructions

  1. Thoroughly mix the dry yeast with 1/3 of the flour and all the other ingredients.
  2. Heat milk with margarine over low heat until very warm (120° to 130°F).
  3. Add liquids to dry ingredients and mix well.
  4. Beat the mixture for 2 minutes at medium speed on an electric mixer.
  5. Add 1/2 cup of flour, then add eggs and beat on high speed for 2 minutes.
  6. Stir in the fruit and add additional flour as needed to incorporate.
  7. Let the dough rise until doubled in size.
  8. Shape into 3 round loaves and let rise again.
  9. Bake at 375°F for 25 to 30 minutes until golden brown.
