- In a saucepan, combine sugar, water, corn syrup, and cream of tartar until the sugar is dissolved.
- Pour half of the mixture into another saucepan.
- Bring both saucepans to a boil until the syrup reaches 260°F on a candy thermometer.
- Do not stir the syrup during boiling.
- Add 1/2 teaspoon of peppermint flavoring to each saucepan.
- Add food coloring to only one of the saucepans.
- Oil a marble or enamel surface and pour the hot syrup onto it to cool.
- Once cooled, stretch and pull the syrup to form ropes of red and white.
- Twist the ropes around each other repeatedly to create a striped pattern.
- Shape the twisted ropes into cane shapes.
- Allow the candy canes to harden on the oiled surface.
- Hang the finished candy canes on the Christmas tree or store them in an airtight container.
