Ingredients

  • 3 cups sugar
  • 1/2 cup water
  • 3/4 cup light corn syrup
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon peppermint flavoring
  • 3/4 teaspoon red vegetable coloring

Instructions

  1. In a saucepan, combine sugar, water, corn syrup, and cream of tartar until the sugar is dissolved.
  2. Pour half of the mixture into another saucepan.
  3. Bring both saucepans to a boil until the syrup reaches 260°F on a candy thermometer.
  4. Do not stir the syrup during boiling.
  5. Add 1/2 teaspoon of peppermint flavoring to each saucepan.
  6. Add food coloring to only one of the saucepans.
  7. Oil a marble or enamel surface and pour the hot syrup onto it to cool.
  8. Once cooled, stretch and pull the syrup to form ropes of red and white.
  9. Twist the ropes around each other repeatedly to create a striped pattern.
  10. Shape the twisted ropes into cane shapes.
  11. Allow the candy canes to harden on the oiled surface.
  12. Hang the finished candy canes on the Christmas tree or store them in an airtight container.
