Ingredients
- 2 c. thinly sliced cauliflower florets ⓘ
- 2 c. thinly sliced broccoli florets ⓘ
- 1/2 c. chopped pimento-stuffed green olives ⓘ
- 1/2 c. finely chopped green or red peppers ⓘ
- 3 Tbsp. thinly sliced green onions
- 2 Tbsp. white wine vinegar ⓘ
- 1 tsp. salt
- 1/2 tsp. sugar ⓘ
- 1/8 tsp. freshly ground pepper
- 6 Tbsp. vegetable oil ⓘ
- 2 Tbsp. fresh lemon juice ⓘ
Instructions
- Combine cauliflower florets, broccoli florets, chopped green olives, chopped peppers, and sliced green onions in a large salad bowl.
- In a small bowl, whisk together lemon juice, vinegar, salt, sugar, and pepper until seasonings are dissolved.
- Slowly whisk in vegetable oil until the dressing is well blended.
- Pour the dressing over the salad ingredients and stir to blend evenly.
- Cover the bowl and refrigerate for 2 hours before serving.
