Ingredients

  • 2 c. thinly sliced cauliflower florets
  • 2 c. thinly sliced broccoli florets
  • 1/2 c. chopped pimento-stuffed green olives
  • 1/2 c. finely chopped green or red peppers
  • 3 Tbsp. thinly sliced green onions
  • 2 Tbsp. white wine vinegar
  • 1 tsp. salt
  • 1/2 tsp. sugar
  • 1/8 tsp. freshly ground pepper
  • 6 Tbsp. vegetable oil
  • 2 Tbsp. fresh lemon juice

Instructions

  1. Combine cauliflower florets, broccoli florets, chopped green olives, chopped peppers, and sliced green onions in a large salad bowl.
  2. In a small bowl, whisk together lemon juice, vinegar, salt, sugar, and pepper until seasonings are dissolved.
  3. Slowly whisk in vegetable oil until the dressing is well blended.
  4. Pour the dressing over the salad ingredients and stir to blend evenly.
  5. Cover the bowl and refrigerate for 2 hours before serving.
