Ingredients

  • 5 envelopes unflavored gelatin
  • 1/2 cup sugar
  • 2 cups desired fruit juice, nectar or drink (such as cranberry, grape, orange or apricot)
  • 2 tablespoons lemon juice

Instructions

  1. In a 1 1/2-quart saucepan, combine unflavored gelatin and sugar.
  2. Add fruit juice; let stand for 5 minutes.
  3. Bring to boiling over medium heat; reduce heat to low.
  4. Cook and stir until gelatin and sugar dissolve completely.
  5. Remove from heat and stir in lemon juice.
  6. Pour mixture into shallow pans or paper baking cups.
  7. Allow to cool to room temperature.
  8. Chill until firm, about 2 hours.
  9. If desired, loosen sides of the jelly.
  10. Carefully turn out of pans using a wide spatula.
  11. Cut into 1 1/2-inch pieces with cookie cutters.
  12. Place on wire racks to dry.
  13. Store in airtight containers, layered between waxed paper, for up to 5 days.
