- In a 1 1/2-quart saucepan, combine unflavored gelatin and sugar.
- Add fruit juice; let stand for 5 minutes.
- Bring to boiling over medium heat; reduce heat to low.
- Cook and stir until gelatin and sugar dissolve completely.
- Remove from heat and stir in lemon juice.
- Pour mixture into shallow pans or paper baking cups.
- Allow to cool to room temperature.
- Chill until firm, about 2 hours.
- If desired, loosen sides of the jelly.
- Carefully turn out of pans using a wide spatula.
- Cut into 1 1/2-inch pieces with cookie cutters.
- Place on wire racks to dry.
- Store in airtight containers, layered between waxed paper, for up to 5 days.
