Ingredients

  • 2 1/2 cups shredded unpeeled zucchini
  • 1 cup water
  • 1 cup sugar
  • 1/2 cup vinegar
  • 1/4 cup horseradish
  • 1 (3 oz.) package lemon flavored gelatin

Instructions

  1. Combine zucchini, sugar, water, vinegar, and horseradish in a saucepan.
  2. Bring to a boil and cook for 5 minutes, stirring often.
  3. Remove from heat and add gelatin, stirring until dissolved.
  4. Ladle quickly into hot sterilized small jars or frozen containers.
  5. Cover tightly and cool.
  6. Store in freezer or refrigerator up to 2 weeks.
