Ingredients

  • 12 lb. ripe tomatoes
  • 1/4 c. salad oil
  • 3 medium onions
  • 3 large carrots
  • 2 medium ripe green bell peppers
  • 2 medium cloves garlic
  • 1 (12 oz.) can tomato paste
  • 1/4 c. brown sugar, packed
  • 2 Tbsp. salt
  • 2 tsp. oregano
  • 1 1/2 tsp. basil
  • 1/2 tsp. ground black pepper

Instructions

  1. Shred the onions and carrots.
  2. Dice the green bell peppers.
  3. Mince the garlic.
  4. Peel and dice the tomatoes into a colander to drain.
