  • 4 medium potatoes
  • 1/4 cup sliced green onions
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Wash and bake the potatoes in the oven at 400°F for 45 minutes to 1 hour or until done.
  2. While the potatoes are baking, combine the sliced green onions, shredded Monterey Jack cheese, ricotta cheese, chopped cilantro, chopped parsley, minced garlic, salt, and white ground pepper in a bowl and toss lightly.
  3. When the potatoes are done, remove from the oven and let them cool to the touch.
  4. Cut the potatoes in half lengthwise and fluff with a fork.
  5. Top each potato half with approximately 1/4 of the herb and cheese mixture.
  6. Return to the oven or microwave just long enough to melt the cheese.
  7. Serve immediately.
