Ingredients

  • large overripe cucumbers
  • 2 c. lime
  • water
  • 1 c. white vinegar
  • 1 small bottle red food color
  • 1 Tbsp. alum
  • 10 c. sugar
  • 2 (10 oz.) pkg. red hots (candy)
  • 8 sticks cinnamon

Instructions

  1. Soak cucumbers in lime and enough water to cover for 24 hours.
  2. Drain the cucumbers and soak for 3 hours in clean clear water.
  3. Drain the cucumbers.
  4. Simmer the cucumbers for 2 hours in white vinegar, red food coloring, cinnamon sticks, and enough water to cover.
