Clam-Tomato Broth

Ingredients

  • 2 cups Clamato juice
  • 2 cups beef broth
  • 1 cup dry white wine
  • 1/2 cup dry sherry
  • 1 green onion, finely chopped
  • 1 small garlic clove, halved
  • minced fresh parsley (to garnish)

Instructions

  1. Combine first 4 ingredients in medium saucepan over medium-high heat and bring to boil.
  2. Reduce heat, add onion and garlic and return to boil. Let boil 1 minute.
  3. Discard garlic.
  4. Ladle soup into mugs and garnish with parsley.
