Ingredients

  • 1 (9-inch) baked pastry shell
  • 3 Tbsp. cornstarch
  • 1 2/3 c. water
  • 1 (14 oz.) can Eagle Brand milk
  • 3 egg yolks
  • 2 Tbsp. margarine
  • pinch of salt
  • 1 tsp. vanilla
  • 3 medium bananas
  • ReaLemon juice

Instructions

  1. Slice the bananas and cover them with lemon juice in a bowl.
  2. In a saucepan, combine water and cornstarch, cook over medium heat until thickened.
  3. Add Eagle Brand milk, beaten egg yolks, margarine, and a pinch of salt to the mixture, cook until it begins to boil and thickens.
  4. Remove from heat and stir in vanilla.
  5. Pour the custard filling into the baked pastry shell.
  6. Arrange the banana slices on top of the filling.
  7. Chill the pie in the refrigerator until set before serving.
