Ingredients

  • 6 eggs
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 quart milk
  • 1 teaspoon vanilla

Instructions

  1. In a large saucepan, beat together eggs, sugar, and salt.
  2. Stir in 2 cups of milk.
  3. Cook over low heat, stirring constantly, until mixture is thick enough to coat a metal spoon or reaches 160°F.
  4. Remove from heat. Stir in remaining 2 cups of milk and vanilla.
  5. Cover and refrigerate until thoroughly chilled.
  6. Just before serving, pour into a bowl or pitcher.
  7. Garnish or add stir-ins, if desired.
  8. Serve immediately.
