Ingredients

  • 1 1/4 cups wheat flour
  • 1 cup white flour
  • 3 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 cup natural applesauce
  • 1/2 cup honey
  • 1 egg white
  • 1 cup raisins
  • 1 small apple, peeled and diced (optional)
  • 4 to 5 tablespoons plain or vanilla yogurt

Instructions

  1. Preheat oven to 425°F.
  2. Combine wheat flour, white flour, baking powder, and cinnamon in a large mixing bowl.
  3. Cut in applesauce until the mixture becomes crumbly.
  4. Add honey, egg white, and vanilla; mix well.
  5. Add raisins and optional diced apple; mix.
  6. Gradually add yogurt, one tablespoon at a time, mixing thoroughly after each addition.
  7. Dough should be lumpy and cling to the bowl and spoon.
  8. Drop dough onto a greased cookie sheet, forming each scone like a biscuit, about 3 to 4 inches in diameter.
  9. Bake until golden brown.
  10. Scones will have a muffin-like texture.
