Ingredients

  • 1 cup sugar
  • 1/3 cup butter or margarine
  • 1 teaspoon coconut extract
  • 1 egg
  • 1 package Martha White Bix-Mix

Instructions

  1. Preheat oven to 375°F.
  2. Cream sugar, butter, and coconut extract until well combined.
  3. Add the egg and blend thoroughly.
  4. Stir in Martha White Bix-Mix and spud flakes until the mixture is well blended.
  5. Shape the dough into 3/4-inch balls.
  6. Place the balls 2 inches apart on ungreased baking sheets.
  7. Bake for 12 to 14 minutes or until golden brown.
  8. Transfer to wire racks to cool.
